When I am not eating leftovers this is my go to lunch. I always boil more eggs than I need at a time as I know they will get eaten for a quick snack or to beef up a salad.
Boiled Eggs (free range if possible)
Can of tuna (in spring water)
Salad stuff- tomato/lettuce/red onion/olives or leftover veg from night before – i.e. broccoli/peas
Drizzle over olive oil and salt & pepper
