A definite go to easy dinner for my family is a beef stew done in the slow cooker, I always cook a large one so that there are plenty of leftovers for lunch or dinner the following day. I use whatever veges are in season or in my fridge, and almost always use a tomato sauce base.
Here is one I put on this morning:
First cut up veges and meat, today I used beef brisket.
Veges: onion, garlic, carrot, celery, mushrooms, capsicum, kale, courgettes, capers, rosemary, bay leaf.
Put meat in first, then veg, pour on passata (or a couple of tins of chopped tomatoes) and tomato paste, a little water, add herbs, salt & pepper- and leave to simmer away!
It is great by itself or serve with mash potatoes…yum.
